Distilled in Quintaine, Viré-Clessé, using two historic wood-fired stills dating from 1932 and 1952, drawing on grape marc, grains, fruit and aromatic plants sourced alongside Domaine Guillemot-Michel.

Distillerie Chromatique is the spirits project of Sophie and Gautier Guillemot, launched in 2023 alongside Domaine Guillemot-Michel in Quintaine, Viré-Clessé. Drawing on the family domaine's reputation in the Mâconnais and Sophie's experience at Hennessy, the distillery combines traditional Burgundian distilling with a more experimental approach.

Using two historic wood-fired stills dating from 1932 and 1952, they craft a range of small-batch spirits from grape marc, grains, fruit and aromatic plants. Each release reflects their curiosity and creativity, bringing together local ingredients, traditional techniques and new inspirations.

Current Spirits

  • 2019 'Djinn' Gin, 48.5% — Juniper, Chardonnay, Coriander, Grapefruit, Lemon, Sansho, Blackcurrant and Cardamom
  • 'Or Vert' Liqueur, 50% — A herbal liqueur made from aromatic and medicinal plants similar to Chartreuse
  • 'Dahu' Absinthe, 50% — Wild picked absinthe from the Chartreuse alps
  • 'Pop-Corn' Eau de Vie, 40% — Grain brandy with caramel notes
  • 2016 'Esprit de Chardonnay' Marc de Bourgogne, 42% — Chardonnay pomace de-stemmed and fermented in 228L cask, distilled and aged for 3-4 years
