Domaine Defialy
Regeneratively farmed wines from Micah Hewitt, centred on the Macedon Ranges with select vineyard parcels across Victoria.
Micah Hewitt established Defialy in the Macedon Ranges in 2020, initially producing small quantities of wine from carefully selected Victorian vineyards. In 2022, he expanded the project by taking over Candlebark Hill, an established vineyard near Kyneton, before adding a second site at Metcalfe. Both vineyards had been neglected prior to his arrival and have since been revitalised through regenerative farming and a commitment to organic principles.
Today, Micah farms estate vineyards planted to Pinot Noir, Chardonnay, Syrah, Cabernet Sauvignon, Merlot, Cabernet Franc and Malbec, alongside a small number of alternative varieties. Working with minimal intervention in the cellar, he allows each site to shape the wines, with viticulture at the centre of the project. The result is a distinctive collection of cool-climate Macedon Ranges wines that reflect both careful farming and a thoughtful, site-driven approach to winemaking.
