Distillerie Chromatique, led by Sophie and Gautier of Domaine Guillemot-Michel, is a hub of creativity in Burgundy, where traditional expertise meets bold innovation in artisanal spirits. Sophie, who honed her craft at Hennessy, oversees production using two historic wood-fired stills from 1932 and 1952, allowing an unparalleled expression of Burgundy’s marcs, distilled to their purest essence.
